This technology is a coating composition for freshness indication, formulated with water, polyvinyl alcohol, and a cellulose nanocrystal-silver (CNC-Ag) nanocomposite in specific proportions, along with its manufacturing method. It allows for an indicator that changes color in response to food spoilage to be applied directly onto packaging surfaces as a coating.
Existing time-temperature indicators are inexpensive but fail to provide direct information on food quality. Gas and freshness indicators typically require separate attachment inside the packaging, which raises concerns about potential contamination and adds an extra step to the manufacturing process.
This technology disperses the CNC-Ag nanocomposite within a polyvinyl alcohol matrix, which adheres well to various substrates like paper and polymers, allowing the indicator to be integrated into the packaging during production or post-processing. The fixed position of the indicator makes it easy for consumers to check, and the materials used are harmless upon contact with food. It can be applied to intelligent packaging for meat, seafood, and fresh produce, enabling visual freshness verification without the need for separate labeling.
This invention was developed with support from the Ministry of Science and ICT for the development of nanocellulose-based printable food freshness indicator labels.
