Functional tofu for improving muscle diseases using mealworm larva protein

This technology relates to tofu for preventing and improving muscle diseases, which contains mealworm larva protein or its extracts/hydrolysates as active ingredients.

With an aging population, diseases related to sarcopenia and muscle atrophy are increasing. However, there has been a lack of food products that improve muscle function decline while being easy to consume.

This tofu effectively suppresses the expression of muscle-wasting genes such as myostatin, MuRF1, and Atrogin-1. It also exhibits excellent antioxidant and anti-inflammatory activity. Its low gel strength and high digestibility make it useful as a customized functional food for the elderly or patients with chewing and swallowing difficulties.

Key Features:
  • Tofu containing mealworm larva protein, extracts, or hydrolysates as active ingredients
  • Suppression of muscle-wasting gene expression, including myostatin, MuRF1, and Atrogin-1
  • Excellent antioxidant and anti-inflammatory activity
  • Low gel strength and high digestibility, making it suitable as a customized food for the elderly and patients with swallowing difficulties
