This technology relates to an antioxidant composition containing, as an active ingredient, starfish extract fermented with a mixture of Cordyceps mycelium and grains, as well as its manufacturing process.

Starfish are largely discarded due to low resource utilization, and there have been difficulties in using them as functional antioxidant materials through fermentation.

By inoculating and fermenting starfish with Cordyceps mycelium to obtain an extract, this technology enables the conversion of waste resources into useful antioxidant compositions for functional material applications.
